Из всех вопросов,рассматриваемых в данной книге,наибольшее внимание общественности, политиков и государственных чиновников в Европе в последнее время привлекает безопасность пищевых продуктов. Структуры питания, быть может, оказывают и большее влияния на общее состояние здоровья населения, а политика в области продовольственного обеспечения - на хозяйственную деятельность в сельских районах, но безопасность пищевых продуктов имеет широкое и существенное значение. Пищевые токсикоинфекции накладывают значительное бремя на здравоохранение и социальное обеспечение, а вопросы безопасности пищевых продуктов имеют существенное значение для мировой торговли: половина всех экспортируемых пищевых продуктов в мире производится в Европе (1).
